Ingredients

  • Gram flour – 2 cups beaten
  • yogurt –  1 cup salt to taste
  • Turmeric powder – 1/2 Tsp
  • Green chili and ginger paste – 1 Tsp 
  • Oil – 2 Tsp
  • Lemon juice – 1 Tsp
  • Soda bicarbonate – 1 Tsp
  • Mustard seeds – 1 Tsp
  • Sugar – 1 Tsp
  • Freshly chopped coriander leaves – 2 Tsp
  • Scraped coconut – 1/2 cup

Step By Step Gujarati Dhokla Recipe

  • Firstly, pour besan/gram flour in a bowl. Now, add 1 cup of warm water along with yogurt. Mix it well and avoid leaving any lumps. Now, add salt and mix again into a smooth paste.
  • Leave the mixture aside for around 2-3 hours and allow it to ferment. Once the besan has fermented, add green chili-ginger paste along with turmeric powder. Mix the batter well.
  • Now, heat the steamer. Take the bowl in which you want to steam the batter. Also, grease it.
  • In a bowl, take lemon juice, one tsp oil, soda bicarbonate, and mix well. Pour this mixture into the fermented gram flour mixture.
  • Pour this batter into the container which you had greased and put it in the steamer.
  • Let it steam for 10 minutes while covering the lid. Once it gets cooled, cut into small pieces and place in a serving bowl or plate.
  • Now, take a small pan, Put the remaining oil, and heat it. Put mustard seeds into the oil as it heats. As soon as the seeds began to crackle add curry leaves and green chilies into this tadka. Now, add half cup water and 1 tsp sugar and stir well. Add coriander leaves and bring water to boil. Your tadka is ready now.
  • Pour this tadka over the dhoklas and let them soak it.
  • Finally, serve your yummy dhoklas garnished with chopped coriander leaves, green chilies, and scraped coconut.
